Spicy Dark Chocolate Drops

Crisped quinoa, roasted almonds, dark chocolate, and a kick of cayenne make these healthy treats irresistible!


These treats are addictive, healthy, and a little bit exciting.

A quartet of "good for you" ingredients! dark chocolate, quinoa, roasted almonds, and cayenne pepper. You can eat these treats guilt free.

Before you let your willpower take over and pass these clusters of deliciousness by, check out just a few of the benefits of the only 4 ingredients they contain.


Dark chocolate (at least 62% cacao) depending on your taste preference ( I like 85% )

Quinoa

  • a good source of plant protein

  • contains twice as much fiber as most other grains ( though technically a seed )

Spicy Dark Chocolate Drops

These crispy quinoa, almond, and dark chocolate clusters are so delicious, you won't believe they are actually good for you! With these healthy ingredients and a touch of cayenne, this is a snack you can feel good about.



Ingredients

  • 1 tablespoon coconut oil ( or olive oil )

  • 1/4 cup quinoa rinsed

  • 1/2 cup salted roasted almonds chopped

  • 1/3 teaspoon sea salt

  • 1/8 teaspoon cayenne pepper optional

  • 3 1/2 ounces dark chocolate (preferably 62 - 85% cacao ) can use bars or dark chocolate chunks

ex: Private Selection from Kroger






Rinse, chop, melt, crisp........



Instructions

  1. Line a baking sheet with parchment paper or butter a baking stone and set aside.

  2. Heat a skillet to medium heat. Add coconut oil to melt. Add quinoa and cook, stirring often, for about 5 to 8 minutes, until the seeds are crisped and golden brown. Transfer to a medium bowl and add in chopped almonds, sea salt, and cayenne pepper.

  3. Place chocolate in the top of a double boiler ( you can also use a metal bowl over a pot of boiling water) Heat until melted, stirring often to prevent burning. Be careful to not get any water into the chocolate!

  4. When the chocolate is melted, add it to the quinoa, almond mixture. Stir until well combined and drop by spoonfuls onto parchment paper. Place in refrigerator for 15-20 minutes until hardened.
